Also i thought i’d talk about what we got up to this weekend – we originally had plans with the lovely Grace but as she double booked & flew off to Italy it meant we actually had a family weekend a w h o l e weekend! Is it just me or is Summer just crazy & you spend your time spread so thinly! Saturday morning came and after our breakfast of scrambled egg on toast with vine tomatos yum yum! we headed out on our bikes for the first time, i’m borrowing a bike from the Swindon Borough Council lend a bike scheme. We picked it up Tuesday & with today being Sunday I have cycled 13 miles 🙂 very pleased with that! Papa took me on the back route between Wichlestowe & Old Town, I definitely recommend it – we used to walk that route at least once a month last year when Rue was smaller its beautiful. Anyway i’ve lost track …. Six miles down and it was lunchtime & then nap time, time for mama to rest 😉 we popped to the shops in the afternoon to pick up some ingredients & made a super healthy dinner (i’ll list the recipe below). It’s safe to say as i was putting little bear to bed last night i fell asleep before he did 😐 i then woke myself up half hour later and he was fast asleep next to me 🙂

Sunday morning called for another early morning bike ride – we were up and out super early whilst the sun was shining & we was back before 10:30am having completed 5 miles!

Don’t you find the free weekends the best – the weekends where you don’t spend a penny don’t have any plans & the sun is shining.

Recently i’ve been trying to eat more healthy – sometimes we eat more processed food because it’s easier by the time i get in from work & i’m not a late eater so therefore i try to eat before i put rue to bed so these recipes below i think will really help! 🙂

  1. Linda McCartney – vegetarian paellea, it’s amazing, healthy & super quick!
  2. Carrot, courgette & halloumi burgers – if you have a food processor these are super quick & so scrummy!
  3. Hello Fresh – Tomatos, sweet potato & Quorn chicken pieces topped with mozzarella – i don’t like feta so i swapped that for mozzarella
  4. Slimming World – Butternut squash stew instead of couscous we had cauliflower rice, the first time i’ve ever tried it & definitely not my last for either (My sweet sister cooked me this on Wednesday night & it was so good! ♥)
