So its that time of year to go elderflower picking yay! this is something we started doing as a family in 2015 thanks to a lovely friend at work who introduced me to the idea, we haven’t looked back since and i’m sure we’ll continue to go picking every year as a family.

We tried a slightly different version this year as we wanted it to taste a bit more citrusy (i’m not sure if thats a word <-) anyway I headed off with the boys one soaky monday afternoon to go pick some elderflower, one holding my hand and one on my chest 🙂

here’s what you need to make your own: (there’s still time to go picking!)

  • roughly 25 sprigs of picked elderflower
  • three unwaxed lemons and one orange
  • 1kg of sugar (eekk!)
  • 1 tsp of citric acid (you can get this over the pharmacy counter)

First of all its always good to give the flowers a clean and remove any little bugs, add them to a large bowl along with the orange and lemon zest (zest from one orange & three lemons), bring 1.5 litres of water to the boil and pour into the bowl cover and leave overnight to infuse.

the next day strain the liquid through a muslin (we used a thin tea towel) into a saucepan, add all of the sugar, the juices from the orange and lemons and finally one tsp of the citric acid, heat gently to dissolve the sugar then bring to a simmer and cook for a couple of minutes.

Dah dah all done, you can now let it cool and then pour into swing-top bottles (i picked ours up from Asda at £2 a bottle)

add some to some lemonade and enjoy ♥

      I saw Mary Berry make her version yesterday & she also froze some elderflower heads to make some later in the year as once you make the cordial it only lasts about a month xxx
